Ellipsis of the countable noun? Then, "software" could be pluralized? For me, the problem seems to be where the expression is being used. Which frequency does it appear? Is it accepted and understood by its peers? Or is it considered not right? What do you think?
Good point Maria. I'm only theorising here, in general I'd say "play it safe and don't make these words plural".Coffee is a perfect example of countable ellipisis, but needless to say it's because of the frequency it is used.
"I'll have a coffee."
