Pat, it's hard to describe.  It's not raw sausage in the Italian sense.  It's spicy and is cooked as part of a churrasco.  Perhaps it comes close to "Polish sausage", but it tastes better.  I liked it so much that cooks made a special deal of buying extra for me because they knew I was going to eat all I could stick my fork into.
